Zucchini Cheese Bake

1 lb 93% Lean Ground Beef (or ground turkey)2 cups cubed zucchini2 cups cubed yellow squash1 medium onion diced1/2 cup diced fresh mushrooms 1/2 tsp sage1/2 tsp marjorum1/2 tsp garlic powder1 Can Cambell's Healthy Request Cream of Celeryfresh ground pepper to taste1 cup grated parmesan cheese1/4 cup panko bread crumbs
Lightly spray a 9 x 13 pan with cooking spray. Preheat oven to 350 degrees.
In a deep skillet, brown ground beef, drain, rinse and pat dry. In same skillet saute onion in some cooking spray. Add squash/zucchini, mushroom and spices and saute until soft.
Mix ground beef, vegetables, soup and 1/2 cup of the cheese and place in casserole dish. Sprinkle bread crumbs and remaining cheese on top of casserole. (I spritz the top with some spray butter).
Bake for 20 mins and then change to a low broil until top is golden.
Serves 6-8

A lot of prep work, lots of potential but fell short in both taste and looks. Was just ok. Def not worth the trouble to make it all over again. - 7/24/08

Well, looks arent a high priority for me. But have to say my family really liked it. Not sure about the "prep work" sauting ground beef and cutting up veggies is pretty standard for me.
