80 grams Radicchio - 2 heads2 tbsp Olive Oil 4 oz Ground Mild Italian Sausage 0.5 serving DRAINED Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano 2 clove Garlic - Minced.5 serving Clancy's Pork Rinds original - 5 med pcs CRUSHED
Separate Radicchio leaves leaving them as whole as possible.
wash Radicchio and pat dry with a paper towel- set aside
Fry sausage in a medium skillet until mostly done.
Drain sausage and put into a bowl (do not clean the pan you will use it to cook the bundles)
Add the garlic, tomatoes, and crushed pork rinds to the sausage and mix. Add more crush pork rinds if necessary. The mixture should be moist.
Fill leaves with mixture and roll.
Secure with toothpick
Use the same skillet that the sausage was cooked in and place the bundles in it.
Add 1/4 cup water
Cover
Simmer for around 10 minutes.
Serving Size: 2 stuffed leaves
