Ingredients
1 large Nantes Carrot2 small leeks or 1 large1 parsnip2 medium Potatoes16 oz Lamb, shoulder, trimmed 3 cup Western Family Chicken Broth No Salt Added Veggie bouillon - McCormick, 1 cubeBay leaves, fresh, 1 sprig (or dried leaves)Mint, fresh, 3 sprigsPepper, fresh-ground black
Directions
Cut lamb into 1” pieces, trim all visible fat. Peel and/or wash vegetables, cut into pieces. Heat broth, dissolve stock cube in it. Place all ingredients in pot. Cook on stew setting plus More, 50 min. Allow pressure to release naturally.
Remove into another pot, allow to cool and place in fridge overnight. Skim fat. Reheat In saucepan to serve, or freeze.
