Moo Shu Vegetables with Tofu

Ingredients
2 small Lo Carb Tortillas1 tsp sesame oil1 green onion, thinly sliced1 C bok choy, thinly sliced1/4 red bell pepper, thinly sliced2 strips carrot, thinly sliced1/4 C mushrooms,, thinly sliced1/4 C bean sprouts2 oz firm tofu (reduced fat if possible), crumbledginger1 small clove garlic, minced2 tsp hoisin sauce
Directions
Warm tortillas.
Heat sesame oil in a large skillet until very hot.
Add green onions, bok choy, red pepper, carrots, and mushrooms.
Stir-fry vegetables 3-4 minutes until crisp tender.
Add sprouts, tofu, ginger and garlic and continue cooking 2-3 minutes until sprouts are soft.
Stir in hoisin.
To eat, drizzle a spoonful of hoisin in center of tortilla. Top with a generous portion of vegetables, Roll up and eat.
