8 oz. uncooked whole wheat spagetti4 cups fresh spinach leaves, torn3 tsp. olive oil1 med onion, finely chopped1 1/2 lb. shrimp3 cloves garlic, minced1/4 tsp red pepper flakes1/2 cup dry white wine1/4 cup low sodium chicken broth1/4 tsp salt1/8 tsp pepper3 Tbs chopped fresh parsley2 Tbs butter
Cook pasta, drain, stir in spinach and 2 tsp. oil. Cover and keep warm
While pasta cooks, heat remaining 1 tsp oil in 12 in skillet over med-high heat. Add onion; stirring cook about 1 min. Add shrimp, garlic & pepper flakes, stirring cook 2 to 3 min.
Stir in wine, broth, salt& pepper; cook 2 min or until shrimp are pink& firm; remove from heat; stir in parsley and butter until butter is melted. Add shrimp mixture to Pasta mix well and serve.
