Oatmeal Pancakes

Ingredients
1 1/4 cup Old Fashioned Quaker Oats1 1/4 cup skim milk (can use substitute buttermilk for half the milk)1 large egg1 Tbsp light olive oil1 cup whole wheat flour1 tsp baking powder
Directions
In a medium bowl, mix oats with milk, let stand 5 minutes. Add egg and oil, then mix. Add dry ingredients and mix until just blended. Drop by 1/4 cup measure, flatten and shape a bit, and cook on hot, nonstick skillet until brown. Flip and cook on the other side until golden.
Optional: For an antioxidant boost, add 1/2 cup blueberries to the batter before cooking (not included in nutrition count).
Top with topping of choice: maple syrup, preserves, yogurt, applesauce, etc (not included in nutrition count.)

    I think these would be a little bland if the recipe was followed strictly, but they were delicious when I followed the suggestions above: applesauce instead of olive oil, and a little brown sugar, vanilla, and cinnamon. I served these with fresh strawberries. - 9/15/08

    If you add splenda, pumpkin pie spice, a bit of low calorie apple sauce for some added moisture and extra baking powder, this is a wonderful breakfast choice. Comes out fluffier and softer. It keeps me full and gives me the energy I need to complete my workout in the morning. Will make often. - 8/20/08

    I've made these twice. The first time i followed the recipe exactly and they were okay but a bit bland and heavy but very filling. The next time i added 1/4 tsp salt, 1/2 cup cooked pumpkin and 1 tsp pumpkin pie spice. They were very nice with low sugar apple butter on top. I will make these again. - 8/19/08

    Yes, there are 2 pancakes in a serving. When I made them yesterday, the recipe yielded 8 pancakes. I use a generous 1/4 cup to drop them. They are very filling for the calories!

    I LOVE oatmeal, and I love these! I put a tiny bit of brown sugar and some cinnamon in mine as well as a splenda packet. I'd def make them again, next time I'm going to add some diced apples. They remind me of those oatmeal breakfast bars by quaker i think, except these are less sugary/better for u. - 8/21/08

    I make these all the time now for myself and my kids! Everyone loves them!!! For a special treat for the kids sometimes I add a couple of chocolate chips! yes that adds calories but they love them!!! - 8/22/08

    Everyone is right they are bland. I just got mine out the pan and tried one, but ya know, its not always about flavor. I like them b/c they are filling and that's what i am looking for something to keep me full until lunchtime and this will do it. i'd make them again and freeze some for later. - 8/11/08

    Very good oatmeal pancakes! Follow the recipe, and make sure to use a spatula to spread the mix out on the skillet as it doesn't spread by itself. Will make often. - 8/3/08

    I thought this was really pretty good. I did add some splenda, some vanilla extract, some cinnamon, and some Brummel and brown at the end, but I wouldn't have known where to start without this recipe. The pancakes I cooked were good and filling. - 7/20/09

    I add pumpkin pie spice and about a tbsp of Splenda and that took cake of the 'bland' taste. A pinch more baking soda and they came out a bit fluffier as well. Cheers! - 8/19/08

    I made this for breakfast this morning, and it was terrific! The only reason I didn't give it a five star rating was because I took the advice of others who tried it and added 1 tbs. of natural cane sugar, 1/2 tsp of cinnamon, and a pinch of salt. - 2/8/09

    These turned out very good...and easy! I added blueberries and cinnamon to the mixture. They are hearty pancakes. Although they definently needed some toppings...I used lite syrup. - 8/1/08

    I made these today with the addition of 4 tablespoons of sugar free rasberry jam and i used 1 tablespoon of canola oil instead, i also rounded out the measurements to 8 ounces of 2% milk and 100 grams each of the flour and oats, came out prefecly, cooked them low and slow, were really moist. - 5/12/09

    I added a sprinkle of salt to the batter and some cinnamon. My daughter who does not like oatmeal liked this pancake, the recipe made 5 but 1 was enough for my daughter, and they refrigerate and heat up nicely. A keeper for us. - 9/14/08

    I used vanilla almond milk rather than cow's milk, and added oat bran for even more fiber, and a little salt so that they were savory - quite nice with sliced turkey breast. I cannot imagine liking them with traditional "pancake" things like fruit or syrup. - 8/15/08
