3.0 cup Brown Rice, long grain3.0 cup Beans, black3.0 cup Beans, red kidney1.5 cup kernels Yellow Sweet Corn, Frozen100.0 grams Cilantro, raw8.0 tbsp Extra Virgin Olive Oil6.0 tbsp (C) Vinegar, Red Wine (Gr Value)1.0 tsp Cumin seed1.0 tsp Granulated Sugar74.0 gram(s) bell pepper, red, sweet, raw1.0 fruit without skin and seeds Avocados, California (Haas)1.0 clove Garlic
Cook rice according to package. Once rice is cooled add drain/rinsed beans, corn, chopped peppers and garlic. Mix dressing: EVOO, sugar, red wine vinegar, cumin, salt and pepper to taste. Add dressing to rice mixture and mix well. Refrigerate for 3-4 hours. Add avocado right before serving.
