Summertime Salad (Cucumber, Green Pepper, Tomato and Onion)

About 4 cups of Fresh cucumbers, chopped, with or without peel4 medium tomatoes, chopped1 green pepper, chopped1 medium onion, choppedabout .25 cup chopped fresh parsley2 garlic cloves, minced fine4 TB Olive Oil.5 cup Red Wine VinegarSalt, Black Pepper, Oregano and Sweet Basil to taste
Chop all vegetables and mince the garlic. Mix together thoroughly in a large bowl.
Add Parsley and seasonings and again mix thoroughly.
Add vinegar and oil and toss to blend all the flavors.
Makes about 8 servings.
