Bircher-style Muesli

Ingredients
2 cups of porridge (rolled) oatsJuice of 2 lemons1 cup water2 apples2 cups plain low-fat yogurt1/4 cup whole almonds (chopped or sliced when added)1/4 cup sunflower seeds (unsalted)
Directions
Makes 4 servings

1) Mix the oats with the lemon juice and water and soak overnight.
2) In the morning grate the apple, and mix it into the soaked oat mixture, along with the yogurt .
3) Toast the almonds and sunflower seeds in a frying pan until fragrant. (This can be done in advance - the mix can be refrigerated in a sealed jar).
3) Serve in bowls, topped with the almonds and seeds - add fresh or dried fruit if required.

    This is great thanks! The "fat" version I have of this has honey and condensed milk, but it really doesn't need it. Love the addition of the nuts and seeds! - 11/16/11

    I make a bircher muesli very simlar to this but use low fat milk in place of lemon (will try it with the lemon though), but it is great with inseason fresh fruit added, strawberries, apricots, bananas etc. When there is no fresh fruit about, you can also use tinned fruit. - 9/17/09
