Zucchini, Black Beans
Shred Zucchini and place in skillet with .25 tsp margarine, add the black beans and mash with fork, add green peppers. Cook until heated through and tender. Remove vegetables from pan. Now add your tortilla to the pan on medium heat. Place vegetable mixture on tortilla next place cheese on top of that. Lastly, place the other tortilla on top. Cover with a lid to allow to steap for ablut 3 minutes until the cheese is melted. Flip over to warm ohter side of tortilla. Cut into 4 quarters and serve with pico de gallo and sour cream.
