yummy low calorie banana muffins

100grams instant oatmeal3/4 cup flour1 tbsp baking powder1/2 tsp baking soda1/8 tsp salt1 cup mashed bananas1/4 cup splenda1/2 cup applesauce3 tbsp egg whites (1 egg beaters serving size)1/2 tsp vanilla extract1/2 tsp cinnamon
1.preheat oven to 350 degrees
2.grease muffin tin with Pam or use muffin holders
3.combine flour, oatmeal, baking powder, baking soda, cinnamon and salt into a bowl, mixing well
4.in another bowl, use a mixer to beat the banana, splenda, egg whites, and vanilla. then stir in the apple sauce
5.stir all ingredients together
6.pour mixture into muffin tins, 3/4ths full
7.bake for 15-20minutes, you can also use a toothpick: stick in center of a muffin, if it comes out clean then the muffins are done.

CANTWEIGHT2LOSE
Not bad for a lo-cal muffin although I DID double the vanilla required; Next time I'm also going to double the Splenda required; Word of warning though, don't use paper liners unless they're waxed paper liners because the muffins will stick like fiends to a standard paper liner; Thanks for sharing! - 8/1/08
