Oven Roasted Potato Wedges

Ingredients
2, med. russet potatoes, scrubbed (about 8 oz. each)1 Tbsp Extra Virgin Olive Oil1/2 tsp garlic power1/2 tsp kosher salt1/4 tsp freshly ground pepper
Directions
Pre-heat oven to 375 degrees.

Slice each potato into 8 wedges and place into a medium bowl. Mix together olive oil, garlic powder, kosher salt and ground pepper. Pour over potatoes wedges and mix well. (Use your hands for this!)

Place wedges on a cookie sheet, skin side down, leaving space between each wedge.

Place into oven and bake approximately 45 minutes until golden brown.

Makes 4 servings.

    I use cajun or creole seasoning for a little more flavor and spice! I've also made an italian version with rosemary and parmessan(more calories). These potatoes go with everything, beef, poultry, pork and seafood. - 4/21/10
