12 oz 80/20 ground beef chuck 1 serving Onion, White Raw (1 medium) (by SHHUGHES) .5 cup Bell Pepper, Green - 1 Cup, Chopped (by 16HEATHER) 2 serving Giorgio Mushrooms Pieces and Stems no salt added 4oz (by DBWALLER) .75 cup RO TEL No Salt Added Diced Tomatoes & Green Chilies 1.75 cup Hunt's Tomato Sauce, no salt added 3 tbsp Meijer Sour Cream (by CJSWAGER) 1 cup Great Value Fat Free Shredded Mozzarella Cheese 1.5 cup Homemade cauliflower rice
In large, non-stick skillet brown ground beef with onion (chopped), and chopped bell pepper, until beef is no longer pink and veggies are softened as desired. Drain any rendered fat or liquid. Add back to pan. Stir in mushrooms, Ro-Tel tomatoes (full can, undrained), and tomato sauce (15 oz. can). Add seasonings of choice. I used 3-4 slices of jalapenos (finely chopped with a splash of juice), a dash of ground cumin, chili powder, paprika and a little salt. Reduce to simmer. Stir in Cauliflower rice. Cook on simmer for 15-20 minutes to incorporate all the flavors. Stir in sour cream and cheese. Note: Mine had quite a bite!!!

OOOH! I haven't seen that mix....where did you get it?
My husband and I both liked it, but he doesn't do spicy too well! I like it to make my nose run and eyes water!! LOL!!
