Coconut Vindaloo Quinoa

Ingredients
1.5 cups dry Quinoa 1.71 cups Coconut Milk (13.66 oz can) 1 tbsp Penzey's Vindaloo spice blend
Directions
Rinse Quinoa, add to rice cooker, and stir in Vindaloo powder until grains are well coated.

Add 1 can coconut milk, and cook on "quinoa" setting.

Serve with other Curry dishes, as a side, etc. 1/2 cup per serving.
