Pesto Orzo with Salmon

Ingredients
Directions
1lb of salmon10 mushrooms cleaned and halved Orzo pasta 1 box1 can of artichoke hearts or bottomsDressing:1 cup olive oil.25 cup of pine nuts or pistachios1 big bunch of fresh basil leaves
Sprinkle fish with a little salt and pepper and place on roasting dish.
Surround with the mushrooms.
Bake at 375 for 25 or so minutes til flakey
Prepare orzo according to the box
in blender make dressing. Blend well.
Rinse and drain orzo.
Pour in half the dressing.
Flake up the salmon and add.
Add mushrooms and artichoke (cut up)
Pour remaining dressing.
Serve
Makes 8-10 servings
Can be served as a fish dinner or fish starter.
Can be served warm or chilled.
Great way to use left over salmon.
