Egg Beaters Egg Salad

Ingredients
1 cup Egg Beaters1/4 cup dill relish6 tbsp light mayonnaise2 tbsp horseradish sauce1 tbsp spicy brown mustardsalt and pepper (or Mrs Dash) to taste
Directions
Coat a small frying pan with non-stick spray. Scramble the Egg Beaters until they are well cooked, but don't let them start to brown. Transfer them to a small mixing bowl and put in the refrigerator to chill. Once they're chilled, mash them up with a fork or potato masher. Mix in all the other ingredients. 3 tablespoons on whole grain bread makes a tasty and healthy snack or light meal.

    i tried this recipe changed it a little, I change pretty much every recipe because I am a picky eater as well as being on low fat, low cholesterol, low sodium diet. never used egg beaters before. But good overall - 1/31/09
