Black Bean veggie burgers

Ingredients
1 large can black beans 30 oz. drained and rinsed1 large green pepper cut into 2" pcs1 large onion cut into wedges6 cloves of garlic peeled2 eggs2 tablespoons chili powder2 tablespoons ground cumin2 teaspoons thai chili sauce or hot sauce1 cup bread crumbs
Directions
Preheat oven to 375 degrees and spray baking sheet with baking spray.

In large bowl, mash beans with fork or potato masher until thick and pasty.

In food processor, finely chop green peppers, onion and garlic, then stir into bean mixture.

In a seperate bowl, combine eggs, chili powder, cumin and hot sauce. Mix well, add to beans and mix.

Add bread crumbs to bean mixture and stir until mixure is pasty and sticks together.

Divide mixture into patties and bake about 10 minutes on each side.

    This is really good....too hot to start the oven so I cooked in vegetable oil in an electric skillet....good flavor, nice crispy edges....make mine a double! - 6/1/10
