Feta-Stuffed Zucchini

Ingredients
2 medium zucchini squash2 oz reduced-fat cream cheese (Neufchatel)1/4 cup crumbled feta cheese2 tbsp fine dry bread crumbs1/4 cup reduced-fat sour cream1/8 tsp black pepper
Directions
Preheat oven to 400. Coat a baking dish with cooking spray; set aside.

Halve the zucchini lengthwise. Remove seeds with a spoon, leaving a shell about 1/2-inch thick. Place zucchini halves, cut sides down, in prepared baking dish. Bake, uncovered, for 10 minutes. Turn zucchini cut sides up.

Meanwhile, for filling, in a small bowl, stir together cream cheese, feta, half of bread crumbs, sour cream and pepper. Mixture will be thick.

Spoon filling evenly into zucchini halves. Top with remaining bread crumbs. Bake, uncovered, about 10 minutes or until zucchini is tender and filling is heated through.

Serves 2.
