1 Cup Spelt Flour1 egg1 cup Almond MilkCinnamon, nutmeg, or cloves to taste2 drops vanilla extract1/4 cup Maple SyrupBlueberries
Cook on low-medium heat for about 3 minutes on each side. Make pancakes thin to make sure inside is cooked all the way through.

Mixed wet ingredients first and then added them to spelt flour. Cooked mixture on buttered (real) cast iron grill. Once done, used real maple syrup and fresh blueberries to garnish. Added a dab of goat's milk plain yogurt on top. Due to no oil, no baking soda or powder, pancakes r like tortillas. - 7/13/12

Something else needs to be added. The pancakes were very heavy even though they were thin, not light & fluffly like you want pancakes to be. Next time, maybe more eggs or add some baking soda & powder to flour. I appreciate the recipe as I do not eat wheat but these were no good. - 11/29/09
