Chicken Quesadillas

Ingredients
-8 Whole Wheat Tortillas-2 lbs of Chicken breast-8 oz of Mozzarella cheese, shredded-1/2 C Green Peppers, chopped-1/2 C Red Peppers, chopped-1/2 C Onion, chopped-1 C Olive Oil-2.5 tsp Old El Paso taco seasoning
Directions
First, take the chicken and cut it into thin, small strips.
Next, put the olive oil and seasoning together to form a type of merinade.
Then, dip the chicken strips into the oil/seasoning mixture and place chicken in a frying pan.
when all of the chicken has been dipped, pour the remaing mixture over the chicken in the pan.
Fourthly, cook the chicken until it is done
Put an 1/8 of the cheese in each tortilla, and place the meat in the tortilla as well, fold over.
Using the same pan, put the folded over tortilla in until it (the tortilla) becomes slightly browned and a little bit crunchy (not too much, you'll want to eat it!)
Flip the 1/2 done quesadilla over until the other side is slightly browned. The cheese should be bubbling by this point.
Cut in halves and enjoy!

    This worked out really well for me as a starter recipe for giving me an idea of what to put in them. I used very little oil and marinated the peppers with the chicken. I also added some canned corn to the mix. Good one! - 2/10/09

    I used the pepper mix I had in the freezer and I used less oil. 1 cup seemed too much - 1/3/08
