Red lentils

Ingredients
3 tablespoons extra-virgin olive oil1 cup finely chopped red onion 2/3 cup finely chopped carrot 1/2 cup finely chopped celery 2 cloves garlic, crushed1 1/4 cups dried red lentils 3 cups vegetable broth chopped mint leaves (optional)
Directions
Heat olive oil over medium heat in heavy pan. Add red onion, crushed garlic, carrots & celery and saute til softened, about 5 minutes. Add lentils, stirring constantly for 1 minute. Add veg broth and turn down heat to medium-low. Simmer, stirring occasionally for 40 minutes. Season with salt & pepper and chopped mint.
