Chicken-Avocado Cobb salad

1 Lb Chicken Breast Cutlets1 tbsp olive oil1/4 tsp salt2 tsp Dijon mustard8 c baby spinach leaves4 slices cooked reduced sodium bacon crumbled1/2 ripe avocado, cut into 1/2 slices or cubes4 cherry tomatoes halved1oz blue cheese, crumbled
preheat grill pan on medium high, heat 2 minutes, brush chicken with 1 teaspoon of the oil and springkle with half of the salut, grill chicken 4 minutes, flip and continue cooking until centers are opaque and juices run clear, about 3 minutes longer, cut into chunks.
to prepare dressing combine vinegar, mustard 1tbsn of water, and remaning 2 tspns oil and 1/8 tsp salt in a glass jar, shake well
in a large bowl, toss spinach with 2 tablesppons of dressing,arrange chicken, bacon, avocado, tomatoes and cheese over spinach, drizzle remaining dressing over salad and season with black pepper to taste.

This was a great recipe to make for lunch! I didn't see how much or what kind of vinegar was suggested and I used 2 tbsp of balasamic vinegar. I'm not sure if the calorie and fat info is correct though. A half of an avocado itself is more than what this recipe says it is. But, it was still good! - 11/12/07
