Ingredients
* Eggplant, 2 cup (1" cubes) * Onions, raw, 1 medium (2-1/2" dia) * Baby Carrots, raw, 12 medium * Green Peppers (bell peppers), 1 cup, strips * Peppers, sweet, red, raw, sliced, 1 cup * Mushrooms, fresh, 1 cup, pieces or slices * Leeks, 1 cup
Directions
Coarsely chop all veggies,Peel the eggpland first.
Place in roasting pan sprayed with pan.


Put a serving in a cut pita, I like a wedge of laughing cow cheese and a bit of djohn mustard. Heat the whole thing in an oven,
