Cupcakes with vanilla frosting (UK measurements)

Ingredients
For the cupcakes:150g butter150g caster sugar175 self-raising flour3 eggs, beaten1 tsp vanilla extractFor the frosting:200g butter350g icing sugar1 tsp vanilla extract1 tbsp hot water
Directions
Preheat the oven to 180 C and put paper cups in a muffin pan.

Beat the eggs in a bowl. Cream the sugar and butter in a food processor, then add all the other ingredients and mix till creamy.

Divide the mixture between 12 cups, and bake for approximately 12-15 mins (or until a toothpick comes out clean). Transfer to a wire rack, and allow to cool completely.

To make the frosting, mix the butter, sugar and vanilla extract and then add the hot water. Mix until the perfect consistency is achieved, and smother the cupcakes!
