Salmon croquettes

Ingredients
4 oz. salmon-cooked/broiled1/2 cup onion1 lemon wedge(1/8 slice)1 white potatoe(diced)1/4 tsp lemon pepper1/4 cup bread crumbs to coat2 tsp Canola oil
Directions
Combine salmon, onion, diced potatoe, juice of lemon wedge and lemon pepper together.

Form small patties, then coat in bread crumbs.

Heat canola oil in skillet and saute, until golden brown. Or you can spray with cooking spray and bake for 20 minutes.

Makes 6 patties.
