Pina Colada Bran Muffins

Ingredients
1 1/2 cups bran2 large eggs @ room temp.1 1/2 cups coconut milk1/4 cup buttermilk1/4 cup nonfat plain yogurt1/8 cup canola oil1/2 cup mashed overripe banana1/2 cup crushed pineapple1 cup sweetened coconut1 tsp. vanilla extract2 1/2 cups flour1 cup sugar1 tbsp. baking powder1 tsp. salt
Directions
Preheat oven to 350'. In a bowl combine the bran, eggs, coconut milk, and buttermilk and set aside for 10 minutes. In a separate bowl combine the flour, sugar, baking powder, and salt. Mash the overripe banana and drain the pineapple. After the bran mixture has rested for 10 min. add the banana, pineapple, vanilla, yogurt, and oil and mix well. Make a well in the dry mixture and pour the wet ingredients into the bowl all at once. Stir until just combined. Spray muffin tin with cooking spray and fill muffin tins 2/3 full. Bake for 20 min. or until toothpick inserted in the middle comes out clean. *Don't wait for the muffins to brown, they stay a light color* Cool and enjoy!

*If you want a stronger coconut flavor you can add a little coconut extract to the mix.

*Makes 24 servings (3 in. muffins)
