Mesquite Sweet Potato Chips

Ingredients
1 small sweet potatojuice of 1 lemon2 T. olive oil1 T. Mesquite Seasoning
Directions
Peel sweet potato and slice into 1/4 inch slices. Lay slices in bottom of flat bottom bowl. In a small bowl mix lemon juice, olive oil and mesquite. Pour over sweet potato slices, cover and marinate in fridge for 1 to 2 hours.

Preheat oven to 375 degrees. Place sweet potato slices in a single layer on a foil covered cookie sheet. Bake for 15 to 20 minutes.
