Mel's Western Omlet

Ingredients
6 Egg whites1/4 c. green bell peppers (chopped)1/4 c. red bell peppers (chopped)3 tbsp. onion (chopped)1/4 c. black beans1/4 c. low-moisture, part skim mozzarella
Directions
Spray a medium frying pan with non-stick cooking spray. Place on medium heat. Add egg whites and cook for 1 minute. Add remainder of ingredients to the middle of the egg whties. Cook for 1 minute. Fold one side of the egg whites over the mixture. Cook 1 minute. Fold the other side of the egg whites over the mixture to close the omlet. Cook 1 minute. Flip omlet and cook for 1 additional minute. Serve immediately. Alternatively, to save for a later meal, place cooked omlet on paper towel to cool. Once cool, store in sealed plasticware.
