Jelly French Toast

Bread, whole wheat, 8 slicesJams, preserves, jelly, 4 tbsp Pancake batter, 1 cup prepared (not cooked) Olive Oil, 1 tbsp Reduced Calorie Pancake Syrup, 4 tbsp
Prepare pancake batter (water to mix).
Lay out 4 slices of bread. Spread 1 tablespoon of your preferred jam or jelly (we like strawberry jam or rasberry preserves) on the slices. Top with the other 4 slices of bread. Heat skillet and olive oil. Dip the sandwiches in the pancake batter (like you would for french toast) and fry in skillet.
Flip once to brown both sides. Remove when brown. Serve with syrup or by itself!
