Peanut Butter Gravy

Ingredients
1lb skinless Chicken Breast1 tbsp chopped onion1 tbsp chopped green pepper1 can Tomato sauce with tomato chunks1/4 cup Peanut Butter (chunky or smooth)2 tbsp Olive Oil
Directions
* Saute Chicken in Olive Oil, cut into chunks
* Add onions, green pepers, and tomato sauce to chicken.
* Simmer until tomato sauce has heated to slight boil
* Add peanut butter, and stir in well
* Serve over rice

** creates 4 to 6 - 1 cup servings
