Sweet Potato & Apple Kugel

Ingredients
4 cups medium sweet potatoes or yams, peeled and finely chopped2 green apples, cored and thinly sliced1/2 cup raisins1 cup apple juice or water1/2 cup matzo meal or bread crumbs1/2 cups walnuts
Directions
Preheat oven to 375F. In a large casserole dish, mix together all the ingredients. Bake uncovered for 45-50 minutes.


Makes 6 servings.

    Very good! I cooked it 20 minutes longer, and added cinnamon,nutmeg,allspice.used half apple juice half water. more like dessert. and it makes more than 6 srv - 12/19/07

    Fantabulous - DH says its a keeper and told me to report. We used water and oatmeal, peeled one apple and chopped the walnuts. To die for...just don't eat too much :) - 6/6/08

    I made this but instead of the bread crumbs I used quinoa, because it's so nutitious, and it turned out great. I imagine you could use most any nuts and it would be good. - 10/29/08

    I modify this one a bit. I boil the chopped sweet potates for a few minutes before adding them, otherwise they will not cook thoroughly. I also add more walnuts throughout the dish and on top. This dish also makes about twice the servings listed. - 10/8/07

    So tasty! I added cinnamon, nutmeg and cloves and used rolled oats instead of matzo or bread crumbs. Will try quinoa next time. I covered for 1/2 hour then removed cover and baked for another 20 min. - 9/7/10

    This was really tasty, but needed way more cooking-after 50minutes, I covered it and turned the oven to full for about another 20minutes. It was really tasty though once it was cooked and I would make it again-has a very wintery taste so i think it would be good for christmas. - 10/24/07

    There's a similar recipe that I have that doesn't require matzo meal or anything. Just sweet potatos, apples. brown sugar and a little bit of orange juice. - 5/29/08

    I think you mean kugel, not hugel. Actually, it sounds more like a holiday fruit compote. Either way, I have similar recipes and they are all delish. Great recipe for Passover if you use the matzo meal over the bread crumbs. - 3/2/08

    Halved the sweet potatoes and used sweeter apples. GREAT. used cous cous instead of matzo. Also cooked it in the microwave and finished in the oven - 9/7/10

    Delicious! Hard to find something my whole family likes but this one passed the test. To save time, I used canned sweet potatoes and drained the juice. I also cut the recipe in half for three people. - 3/14/08

    MMMMM? This reminds me of a delicious "cobbler" (baked apples and sweet potatoes with mini-marshmallows and pecans/walnuts) that my 'Aunt Fannie' would make...She too would soften her apples and sweet potatoes first before baking--a great southern cook!! This (recipe) might work! - 10/29/08

    Good! My daughter loved it. sweet potatoes did not get quite finished. Next time I will probably cook them in the microwave first or leave a little longer in the oven. Used Craisins instead and worked great. - 12/15/16
