Easy Red Turkey Enchiladas

Ingredients
Onions, raw, 1/2 cup, chopped *Tomatoes, red, ripe, canned, with green chilies, 1/2 cupCheddar Cheese, 1 1/2 cups, shredded 6 Whole Wheat TortillasEnchilada Sauce, 1 1/2 cups Turkey, Ground turkey, 93% lean, 10 oz Garlic, 1 clove mincedblack pepper 1 tspSalt, 1 tsp Oregano, ground, 1 tspCumin, 1 tspExtra Vir Olive Oil, 1 tbsp
Directions
In a bowl mix turkey, garlic, pepper, salt, oregano, and cumin. In a pan put tbsp of olive oil, add onion and saute. Add turkey and brown. After turkey is brown add tomatoes. Let simmer for 5 minutes. Spray a baking dish with a light mist of canola oil. Set half of the chees aside. Fill the 6 wheat tortillas with meat mixture and the remaining half of the cheese. Roll each one up tight and sit next to each other in the pan. When all six are rolled up pour enchilada sauce over the top. Cook in a 400 oven for 20 minutes covered with foil. After 20 minutes uncover and put remainder of the cheese on top and cook until cheese has melted. 6 servings

    I added olives and mushrooms to the turkey sautee mixture and made it like mexican pizza in a pie dish which only took 3 small tortillas-really yummy! My husband didn't even notice that they were so much better for us, and I love the flavor of the turkey! - 1/13/09
