Zucchini pasta

Ingredients
1 tbsp olive oil2 cloves of garlic, thinly sliced2 medium zucchini, cut into long thin strands (use veggie peeler)1/4 tsp salt1 cup cherry tomatoes, halved2 tsp lemon juice1/4 cup parmesan cheeseoptional red pepper flakes 1/8 tsp
Directions
heat oil in a large nonstick skillet. Add garlice and cook, stirring 1 minute or until just soft.
add zucchini and salt and cook, stirring frequently, for about 5-6 minutes. Stir in tomatoes. Remove from heat, add lemon juice and cheese. add pepper flakes if you want. (cheese is also optional - i don't always use it.)

makes 4 servings, (about 1 cup)
