Chocolate Chip Cookies (vegan)

1 cup whole wheat flour1/2 cup white flour1/2 tsp salt1 tsp baking soda1/2 cup vegetable oil3/4 cup brown sugar1 TB vanilla extract2 TB soymilk1.5 tsp ground flaxseed (mixed with 4 TB water)6 oz semi-sweet chocolate chip (vegan)1.25 cup quick oats
Mix flour, salt, and baking soda.
Mix oil and sugar until creamy. Add flaxseed mixture. Add soymilk and vanilla. Stir until the color is uniform.
Slowly stir in flour mixture. Add oatmeal and chocolate chips - mix well.
Place in heaped tablespoons on ungreased cookie sheet. The chips do not stay in the batter well, so you may have to replace a few that fall.
Bake at 350 for 12-8 minutes. The cookies will still look moist, but not wet. You should be able to lightly touch the tops of the cookies and your finger will stay clean.
