Butternut Squash Muffins

Ingredients
* *Canola Oil, 1 cup * Egg, fresh, 2 large * *Whole Wheat Flour, 2.5 cup * Salt, 0.5 tsp * Baking Powder, 1 tsp * Baking Soda, 1 tsp * Applesauce, unsweetened, 1 cup * Granulated Sugar, 1 cup * Butternut Squash, 3 cups- mashed * Raisins, 1 miniature box (.5 oz) * Cinnamon, ground, 1 tsp
Directions
Pre-soak raisins in brandy.
Mix dry ingredients together: flour, baking soda, baking powder, cinnamon, salt.
Mix eggs, sugar, oil in a separate bowl.
Cooked butternut squash grate or press with fork to create mashed mass.
Fold squash and applesauce into egg mixture, then combine it with dry mixture. Add raisins at the end.
Preheat oven to 350 degrees and bake muffins for 20 -25 min until ready. Makes 18 servings of 1 muffin.

    Made these yesterday. Need more cinnamon next time. I like them although my husband doesn't care for the "gummy" consistency which is common in many of these "use applesauce" recipes. skipped the raisins. I will freeze and enjoy the rest of this batch here and there! - 11/1/15
