Curry Carrot - Ginger Soup

Ingredients
6 cups vegetable broth1/4 cup skim milk powder650 g carrots, grated1 baking potato, grated2 tsp curry powder1/2 tsp cinnamon1 tsp grated fresh ginger1/2 tsp kosher salt1/4 tsp black pepper
Directions
Combine broth and milk powder in a stockpot, whisking smooth.
Add carrots, potato and spices, bring soup to a boil.
Reduce heat to a simmer and cook, uncovered, 60 minutes, stirring occasionally.
Serve immediately or cool and freeze.
