Spinach Tortellini

Ingredients
2 tsp. Olive Oil, (or to save more calories use Olive Oil Spray)2 cloves garlic, minced10 ounce Frozen Spinach, thawed and drained2 tbsp Basil (fresh, chopped)1 cup Fat Free Half & Half1/4 cup Parmesan Cheese grated1 tsp. Salt1 tsp. Pepper
Directions
Cook Tortellini according to package directions, drain, keep warm.
Heat Olive Oil over medium heat in skillet, add garlic and cook for 3-4 minutes. Add drained Spinach and the Basil. Cook for four minutes. Add the half & half, parmesan cheese, salt and pepper. Bring to boil. Lower to simmer, add the tortellini and continue to cook for four minutes, stirring occasionally. Makes 3 servings.
