YUMMY, Easy Lentil Soup

Ingredients
2 cups (or 1, 16 oz bag) dry lentils2 quarts (8 cups) chicken broth1 onion, diced1 cup carrots, chopped2-3 medium potatoes, no skin, diced3/4 can tomato paste3 cloves garlic1 tablespoon ground cumin
Directions
In a large saucepan, combine all the ingredients. Bring it to a boil, then reduce heat, cover and simmer until lentils are soft (30-45 minutes). Stir occassionally while cooking. Serve with a squeeze of lemon if you want! Sprinkling fresh parsley on top will add color to this dish. Enjoy!!!
p.s. Feeds 6 if the soup is served as the meal, feeds 8+ if it is just part of the meal.

    The canned chicken broth and tomato paste have a LOT of sodium. I used water and a smoked ham hock instead and it was delicious. - 1/12/13

    Soup sounds great, but....at 2,341.6 mg of sodium per serving, it sure isn't healthy for anyone! Or, is that a miscalculation? - 2/16/12
