Homemade Granola

4 cu old fashioned oats1/2 cu packed light brown sugar1/4 t. salt1 tsp. ground cinnamon1/2 cu wheat germ1/2 cu coconut1/4 cu canola oil1/4 cu honey1 tsp vanillaOptional Ingredients:1 1/2 cu sliced almonds1/2 cu salted sunflower seeds1 1/2 cu craisins
Preheat oven to 300 degrees. Spray 15x10" pan with vegetable spray. In a bowl, mix the oats, sugar, salt and cinnamon. In the microwave or saucepan, warm the oail and honey. Whisk in vanilla.
Carefully pour the liquid over the oat mixture. Stir gently with a wooden spoon. Spread granola in the baking pan.
Bake 40 minutes, stirring carefully every 10 minutes.
At end of baking time, transfer granols-filled pan to cooling rack. Cool completely.
Add optional ingredients at this time.
Seal in airtight container or self-sealing bag. Store at room temperature for 1 week, or in the freezer for 3 months.
Yields 36 - 1/4 cu servings.
