Green Curry/Thai Eggplant

Ingredients
1 Jar Trader Joe's Thai Green Curry Simmer Sauce1 2/3 c Chaokoh Coconut Milk2 tsp sugar3c Thai Eggplant cut in wedges2c sweet red pepper cut in chunks6 or 8 fresh Kefir Lime leaves1 inch fresh (or frozen) Galangal sliced
Directions
dump it all in a pan simmer until vegetables are tender. add Lime leaves last.

May be frozen/ may add any or all chicken/tofu/shrimp

serve with rice

    This was great. I did try to use the simmer sauce, but it had little flavor, so I added green curry paste to give it some extra kick. I added tofu for the protein, flavor and texture. I would use fewer eggplants next time. - 2/28/11
