Bigger and Better Banana Bread Muffins

Ingredients
1/2 cup Egg Beaters, Egg Substitute1/2 cup unsweetened Applesauce1/4 cup Sugar-Free Maple Syrup (in place of oil)1 tablespoon Blackstrap Molasses1/3 cup Sugar Substitute (I use Zsweet... Mix with Blackstrap Molasses for Brown Sugar sub)1 teaspoon Vanilla Extract1 cup Mashed Banana1.5 cups Soy Flour0.5 cups Whole Wheat Flour (or Whole Wheat Pastry Flour)1 teaspoon Baking Soda1 teaspoon Baking Powder1.5 teaspoons Ground Saigon Cinnamon (or another TOP QUALITY cinnamon)
Directions
Preheat Oven to 375 Degrees Fahrenheit.
Cookingspray-Grease or Papercup-Line 12 large Muffin cups.

In a large bowl, whisk together your Eggbeaters, Applesauce, Sugar-Free Maple, Brown Sugar Sub (Sugar Sub + Blackstrap Molasses), Vanilla Extract, and Bananas.
In a separate bowl, combine the flours (SIFTED!!!), Baking Soda, Baking Powder, and Cinnamon.
Add the Dry ingredient mix to the wet, combining JUST until all the flour is moistened by the wets.

Spoon batter into muffin cups until completely filled.

Bake for 20 minutes in your preheated oven (Center Racks, please! :) ), or until the tops bounce back when lightly pressed. Allow to cool COMPLETELY before removing from Muffin Tins!

    These didn't seem to have much banana flavor, but I also used only whole wheat flour, as I did not have any soy flour. Could have been my fault... - 10/20/08
