Easy Thai Curry

¼ Cup Red Curry Paste½ Cup Meat (Fish or Chicken)2 Cups Coconut Milk or Cream1 Cup Milk1 Potato½ Onion5 oz. green beans1 Tbsp cinnamon
Combine ¼ cup curry paste with 1 cup coconut milk in deep sauce pan. Mix thoroughly while on medium heat. Once heated through, mix in 2nd cup coconut milk and bring to a boil. Peel potato and cut into bite-sized chunks and par boil. Chop ½ onion. Cut fish into bite sized pieces. Once mixture is boiling, add fish and onion. Once fish is cooked, add potatoes and green beans. Continue to cook on medium heat. Once vegetables are cooked through, simmer for two minutes. Add cinnamon and stir through. Serve right away by itself or on rice.
Serves: 3 (1 and 1/2 cup servings)
Note: For a less hot curry, cut back on the curry paste.
