Pumpkin Bran Cranberry Muffins

Ingredients
Whole wheat flour, 1/2 cupFlour, white, 1/4 cupWheat bran, crude, 1/4 cupApplesauce, unsweetened, 1/2 cupPumpkin, canned, without salt, 1/2 cupEgg substitute, liquid (Egg Beaters), 2 tbspBaking Powder, 1 tsp Baking Soda, 1/4 tspCinnamon, ground, 1 tsp Vanilla Extract, 1/2 tspCranberries, dried, sweetened (craisins), 2 Tbsp
Directions
Preheat oven to 350. Spray nonstick cooking spray in 6 muffin tins. Mix ingredients together. Divide equally amongst tins. Bake for 20-25 minutes or until toothpick inserted in middle comes out clean.

    Tasteless. While low in calories, also low in taste. A little sweetner of some sort would improve them 1000%. I added two tbsp of molasses. - 12/6/10
