Super Easy Faux Mashed Potatos

Ingredients
1 1 lb. bags, Frozen Cauliflower depending on quantity serving.1/3 c. Heavy Cream4 oz. Cream Cheese, Reduced Fat optional.1-2 Tbsp. Un-Salted ButterSalt & Pepper to Taste. * Garlic may be added but will up the Carb values.Tools: Large Pot, Strainer, Food Processor or Hand Mixer, Serving bowl.
Directions
Simmer cauliflower in Large Pot with enough water to allow circulation. Add the cream to the water (this prevents 'browning' discoloration). When cauliflower is tender, drain thoroughly.

Put still warm cauliflower in Food Processor or large bowl for a Hand Mixer, add softened cream cheese, butter & seasonings. You may leave in original cooking pot to use with the hand mixer. Process till smooth. (May be done in more than one batch for large quantities).

Add some 'zing' by additons of sour cream, cheddar cheese, bacon bits, etc.
* Keep in mind calorie/carb difference though.

    Glad U liked! U can always treat them as if it were a "loaded potato" & their just as good frozen & reheated too! I've also used them to mak a 'Shepherd Style" Pie!

    LOVE it. They are so delicious and it really is a great substitute for mashed potatoes. Even my husabnd, a cauliflower hater but potato lover, thought they were great. (I only used the cauliflower, cream, butter, salt and pepper... so simple!) - 6/26/08
