Slow Cooker/Crock Pot Swiss Steak

Ingredients
2 Tbs flour1 3/4 lbs boneless beef chuck steak about 1 inch thick1 Tbs canola oil1 medium onion, sliced1 green pepper, sliced into strips1 clove garlic, sliced1 cup stewed tomatoes3/4 cup condensed beef consomme2 tsp Worcestershire sauce1 bay leaf2 Tbs corn starch
Directions
Coat 5 quart Crock Pot slow cooker with cooking spray. Combine flour with a little salt and pepper. Dredge the meat in the flour mixture. Heat the oil in a large skillet. Add meat and brown on both sides. Transfer to crock pot. Add onion and pepper to skillet. Cook and stir over medium heat for 3 to 4 minutes, until softened but not limp. Add garlic, and cook for another minute. Pour over steak. Add tomatoes, consomme, worcestershire, and bay leaf. Cover; cook on HIGH 3 1/2 hours or until steak is tender. Blend corn starch with a little water until smooth. Stir into crock pot and continue cooking for 10 minutes or until thick. Serve with rice if desired.

    I used salsa in place of the stewed tomatoes and it was simply amazing. Also I used beef bouillon to make my own consommé. For 3/4 cup, add enough bouillon as if you we're going to make 1 1/2 cup. This dish was amazing and hubby asked that it be a keeper. - 1/3/13

    This recipe is delicious! I used fresh green peppers and onions from the garden and would have used our own tomatoes too, but they did not survive the TX drought! I did use the whole can of consomme--couldn't bear to waste the rest! So we just had more sauce, which we love! Thank you much!! - 10/2/11

    Delicious! Added sauted mushroom slices rather than gr.pepper. Used chopped up tomatoes and no beef stock. Didn't bother to thicken with cornstarch; served over mashed potatoes. - 12/31/10
