Perch Filets with Olive and Tomato Salsa

4 perch (or other white fish) filletslemon juice olive oilsea saltfresh black pepperFor the Salsa:250 g. olives, drained1 can of peeled tomatoes, drained1 chili pepper, coarsely chopped3 cloves garlic, coarsely chopped3 sprigs fresh oreganofresh basil leaveslemon juiceolive oilsea saltfresh black pepper
Place your fish in a baking dish, sprinkle with salt and pepper, squirt the juice of 1 lemon on them and drizzle with 1 tablespoon of olive oil. Broil them in the oven at 200°C for 20 -25 min. In the meantime, start making the salsa. Place all the ingredients in a food processor and mix until the olives and tomatoes are coarsely chopped and well-combined with the garlic and chili pepper. Taste and adjust seasoning accordingly. once your fish is done, put the filets on individual plates and top with salsa. Makes 4 servings of 1 filet each!
