Spaghetti Pie

8 oz spaghetti (about half of a package)2 T butter1/3 c parmesan cheese2 well-beaten eggs8 oz part-skim ricotta1 lb lean ground beef1/2 c chopped onion1/4 c chopped green pepper1 6-oz can tomato paste1/2 14.5 oz can diced tomatoes1 t sugar1 t dried oregano1 t garlic salt1/2 c shredded mozzarella
Heat the oven to 350 degrees. Butter a pie plate.
Boil the spaghetti according to package directions, then drain. Mix with the butter and parmesan and use to form a "crust" in the pie plate.
Brown the ground beef, onion, and green pepper together. Drain off the fat, then add the tomato paste, tomatoes, sugar, oregano, and garlic salt and bring to a simmer.
While that's simmering, mix the egg and the ricotta. Pour it into the middle of the spaghetti noodle crust.
Top with the ground beef and tomato mixture, leaving some "crust" bare around the edges.
Cook covered at 350 degrees for 20 minutes. Top with the mozzarella and then cook uncovered for another 5 minutes.
This is a fairly bland recipe--you could spice it up by adding garlic to the ground beef, adding more oregano, basil, and parsley, or using ground sausage instead of ground beef.
