Skillet Lasagna

Ingredients
1 lb. lean ground beef1 large onion15 oz. tomato sauce1.25 c water2.5 c whole wheat pasta (I use the spirals)1 TB Italian Seasoning to mix with the beef1 tsp Italian Seasoning to mix with the cottage cheese1 cup fat free cottage cheese1 cup fat free mozzarellared pepper flakes to taste, if desired.
Directions
1. Cook the ground beef, onion & TB Italian Seasoning. over medium-high heat until the beef is crumbled & browned through. Drain if desired, then return to pan over high heat.
2. Add the water, tomato sauce, & pasta to the meat mixture. Bring to a boil.
3. Cover, turn heat to low & cook 20 minutes or until pasta is nearly desired doneness.
4. Mix the cottage cheese with tsp. Italian Seasoning. Spread the mix over the pasta & meat, then top with the mozzarella. Re-cover & let heat over medium-low for 5 minutes until the cheeses are melted.

    I made this last night using turkey Italian sausage and it was really good! Had enough left to freeze for another meal and enough to have again tonite. Added a romaine salad to it. Thanks! - 12/2/08

    I suppose you could add more cheese, but I found the 2 cups called for to be plenty.
