Garlic Twice-Baked Potatoes

Ingredients
6 medium baking potatoes1 whole garlic bulb1 tsp. olive oil2 tbsp butter, softened1/2 cup fat-free milk1/2 cup butttermilk1-1/2 tsps. minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed1/2 tsp. salt1/8 tsp. pepperpaprika to taste
Directions
Bake the potatoes at 400*F for 45-55 min. or until tender. Meanwhile remove papery outer skin from garlic(do not peel or seperate cloves). Place garlic in a double thickness of heavy-duty foil. Drizzle with oil. Wrap foil around garlic. Bake at 400*F for 30-35 min. or until sofetened. Cool for 10 min. Cut top off garlic head, leaving root end intact. Squeeze softened galic into a small bowl, set aside.

Cut a thin slice off the top of each potatoe and discard. Scoop out hte pulp, leaving a thin shell. In a bowl, mash the potatoe with butter. Stir in milk, butter milk, rosemary, salt, pepper and roasted garlic. Pipe or spoon into potatoe shells. Place on an ungreased baking sheet. Bake at 425* F for 20-25 min. or until heated through. Sprinkle with paprika.

    The actual calorie count for this recipe is 209 calories!

    The only ingredient factored into the nutrition is the garlic. That is very misleading.

    This was good, I went without the buttermilk and used more nonfat milk. I entered the ingredients seperatly and I came up with more like 162 calories, with one cup milk and no buttermilk. It is worth it though for eating a whole potato and not half as suggested on the nutrition page. :) - 4/4/07

    Wonderful recipe -- but the nutrition info is way off. Garlic is listed as the only ingredient used to calculate the stats. I used low fat buttermilk, and everything as listed in the instructions. When I ran ingredients through the calculator, I got 338.5 calories per serving. But it was good! - 6/5/09
