Peanut Butter Oatmeal Tote

Ingredients
2 cups of dry old fashioned oats1 scoop of vanilla protein powder of choice2 cups of unsweetened almond milk (or vanilla soy milk)1 cup of water2 tsp of cinnamon2 eggs4 tbsp of peanut butter2 packet of Splenda (optional)
Directions
Preheat oven to 375 degrees. Mix the oats, cinnamon, and Splenda in a bowl. In a separate medium sized mixing bowl, beat the remaining ingredients. Add the mixture to the oats and mix well. Spray an 8x8 or baking dish of choice with non-stick. Pour the mixture into the baking dish. Bake for 30 min. and check. You want it to set like cake. Mine took 50 min. and I used a round tall bowl. The shorter the baking dish the shorter the cooking time. Let cool and slice into 6 pieces. Wrap in aluminum foil and keep in fridge.

    I made this as soon as I saw it. It was really good. The second time I made it I added 1/4 cup of wheat germ, 1 cup of chopped dates and 1/2 cup of Walnuts to it. I needed a bigger pan to bake it in. I also added two extra scoops of protien powder because I'm a bariatric patient. Thanks! - 12/19/08

    Yes...you can use skim milk and haven't frozen them. They never last that long!
